I think I posted this last year. 1 teaspoon lemon juice 2/3 teaspoon sugar 1 teaspoon salt In a bowl, combine lemon juice and sugar. Add salt and combine. Add one cup or more of unsalted pecans, or unsalted almonds (with skin on) and toss until nuts are coated. Bake on lightly greased (butter) baking sheet, 250F (120C) for 15 minutes. (Check progress and note times to slightly brown nuts, without burning them. Nuts should not be too wet, otherwise they will stick or have too much coating. Start with a small amount and adjust to your liking before doing a larger amount.) After cooling, store nuts in a sealed container. We save Tostito glass salsa jars and Classico glass jars for the purpose. |

If it's utilize, here is a luxurious recipe for cookies that have a roasted pecan on top. These cookies are sophisticated. Chocolate Butter Cookies 1. Mix the following on medium speed till fluffy: 1/2 cup (one stick) unsalted butter, softened 1/3 cup sugar 1 egg yolk 1/2 teaspoon vanilla 2. Sift or whisk together in a bowl: 1 c. flour 3 tablespoons cocoa 1/4 teaspoon cinnamon (optional) Add the flour mixture to the butter mixture in two batches. 3. Somewhere in here, turn the oven on to 375 degrees, so it will be preheated but will not be wasting energy as you roll the cookies. 4. Roll the dough into 1-inch balls and place on a cookie sheet, 3/4 inch apart. Press a raw pecan piece onto the top of each. 5. Bake at 375 for 7-9 minutes. The pecans will roast in this process. |

I like that it is a "dry-roasted" recipe with no added fat, and I don't think I ever tried a recipe with lemon in it. I lived with a large, lovely pecan tree for 14 years. Would freeze them in the shell to keep the moth larva from hatching, and usually ended up with 10 lbs or better of hulled pecan halves. I had tried a large number of recipes over the years, and had found a few outstanding favorites. Like Q, gave them away in pretty containers to neighbors and friends over the holiday season. When I moved it was in haste with concerns for safety and my favorite recipes got left behind, including 4 very different recipes for roasted pecans. This year, in a fit of nostalgia I bought 2 lbs pounds of pecans (at exorbitant prices.) They are sitting in my freezer. When one has more pecans than one knows what to do with, experimenting with different recipes is fun. When one only has two lbs of them at $13.00 a lb, and has lost the carefully culled fav. recipes, one is less likely to randomly try "interesting" recipes from the internet, based on random star ratings that often are misleading. I know you guys and gals to a certain extent, and would prefer to try recipes some of you have made and like. |
