Subject: RE: BS: Rampant Pumpkin Patch From: GUEST,CS Date: 11 Sep 12 - 12:37 PM I like the sound of this Savoury Pumpkin Pie from the UK: http://www.cotswoldfamilylife.org/?p=1005 For 2 servings you will need: 1 onion, peeled and sliced Olive oil 1 garlic clove, crushed 400g pumpkin flesh, chopped 1 tsp dried mixed herbs 1 tsp dried sage 150g mascarpone cheese 150ml vegetable stock 75ml dry white wine Salt & Pepper For the pastry: 150g plain flour 75g butter Method: Oven temp: 200c, Gas mark 5 Make the pastry first by sifting the flour with a pinch of salt into a bowl, chop the butter into cubes and rub into the flour with your fingertips until the mix resembles fine breadcrumbs. Mix in a little cold water a bit at a time until the pastry comes together into a ball and is not sticky. Wrap in film and chill in the fridge while you make the filling. Place the vegetables into a large roasting tin and add the dried herbs and about 2 tbsp of olive oil, mixing well to coat all the veg in the oil and herbs. Spread out the veg into a single layer and roast for about half an hour, turning the veg to cook evenly every few minutes. Remove from the oven and put on the hob over a medium heat. Pour in the white wine and simmer for about 5 minutes before adding the mascarpone cheese, mixing well until it has completely melted. Stir in the vegetable stock and bring up to a nice simmer. Turn off the heat and transfer the vegetable mix to a large pie dish. Roll out the pastry and cover the pie, trim the edges and crimp if you like to make an attractive edge. Brush the top well with beaten egg or milk to give the pastry a nice brown crust, and bake for about half an hour until the pastry is crisp and everything is cooked through. Serve hot with seasonal vegetables. Enjoy! |
