I like horseradish sauce on all sorts of things - Beef of course, some fish, hotdogs (hotdogs with saurkraut and horseradish are far better than with onion and mustard IMO) and the odd times spread thin on sandwiches of all kinds. So, when presented with the opportunity to try horseradish root, how could I resist? Well...

I decided to grate a bit on my beef for tonights dinner and it was as good as I thought but, prior to grating some, I just tried a slice of raw horseradish root. Wow! That's all I can say. And all I could say for about 5 minutes. There is some serious heat in there and it didn't half clear my sinuses! Nothing like Scotch bonnet peppers or some of the more fierce curries, but it don't half pack a punch!

I am now hooked. Anyone want to send me their horseradish recipies?

Horseradish varies in strength depending on the climate. For the really hot stuff get some that was grown in drought conditions.

It is great on a Hamburger, especially with watercress as well.

By coincidence I just came in from digging some up in the garden to prepare my winter supply. I would call it more piquant like hot mustard rather than hot like Scotch bonnet or habanero peppers. It is an irritant to the mucus membranes not unlike tear gas and is more potent the fresher it is.

Pot roast of venison with horseradish sauce for supper tonight.

First time I ate horseradish was at the first seder I was invited to. I was the only gentile there and was asked to grate the horseradish. I understand where the oy vey in Yiddish comes from. When I asked the hostess, "So how come I'm doing this" she replied, "You get to take home the leftover pastrami." It was worth the tears, believe me. That lady could cook brisket like nobody's business.

I've been a fan of horseradish ever since. It's even good with vanilla ice cream. Trust me.

That description is spot on bobad - And the irritant effect explains why my sinus were (and still are!) cleared.

Don't just tempt us with that pot roast though - Send us your recipie!

Oh, and now I have cut into it - how is it best stored?

It's good in bloody marys--gives you something to chew. The first time I tried it, I was a little kid. My father was eating it with something--probably beef-and I HAD to try it. My mother said "you won't like that", but I did. I liked anchovies and bleu cheese and all sorts of things little kids aren't supposed to like.

Wasabi (green horseradish) is good too. Odd that, with hot pepper, breathing through your nose help, but if you try that with wasabi, your sinuses will catch on fire. The 'out' is at least as bad as the 'in'.

I went to a fancy buffet once - the kind with a standing roast of beef and that sort of thing. The dining room was dimly lit, and it was kinda drunk out. I took a big spoonful of pure horseradish to go with the beef, and plopped it down on my plate...as it happened, it landed right next to the mashed potatoes. Shortly after I sat down - did I mention that it was a bit drunk out? - I took a large forkful of potatoes, but got the horseradish instead. I was more than a little glad that I was sitting next to our chief nurse.

DtG, the way I prepare it is I clean it up by peeling or scraping then chop it into small pieces and pop them into a food processor. I get that buzzing and add vinegar to get it into a thick slurry. You can add salt (~ 1 tsp/2C horseradish). I then pack that into clean pint canning jars with a couple of tsp of sugar on top (this keeps it from oxidizing and turning brown). It will keep in the refridgerator 'til next year. If you don't have a food processor you can grate it - that's how my mother used to do it - but a gas mask is handy when preparing it that way.

As for my venison pot roast - I brown a small roast on all sides, remove from pot and add chopped onions and garlic, sautee 'til softened, deglaze pot or skillet with some red wine and/or some stock, add herbs (I used some thyme, bay leaf and black pepper). Throw in some chopped celery and carrot and simmer for a couple of hours. Remove roast and blend veggies in sauce and add a couple of tablespoons of horseradish to that. Serve with mashed potatoes or I also like to have it with kasha (buckwheat groats).

We grow our own from the buds we cut off from the roots. Basically, we just stick it in a pot and ignore it and it does fine.

We also go the chop it into chunks and use the food processor route. We use a middle priced balsamic vinegar with no added salt. Is good and strong.

I always like to eat my steak with HP Sauce, then one time I mixed a tea spoon of horseradish with it. Damn good so now I always make a jar with HP added to it.

here is the main use i have for horse radish...i also add it to tuna
salad sandwich filling mix occassionally..

Mama Stamberg's Cranberry Relish

2 cups whole raw cranberries, washed

1 small onion

3/4 cup sour cream

1/2 cup sugar

2 tablespoons horseradish from a jar
("red is a bit milder than white")

Grind the raw berries and onion together.
("I use an old-fashioned meat grinder," says Stamberg.
"I'm sure there's a setting on the food processor
that will give you a chunky grind — not a puree.")

Add everything else and mix.

Put in a plastic container and freeze.

Early Thanksgiving morning, move it from
freezer to refrigerator compartment to thaw.
("It should still have some little icy slivers left.")

The relish will be thick, creamy, and shocking pink.
("OK, Pepto Bismol pink. It has a tangy taste that
cuts through and perks up the turkey and gravy.
Its also good on next-day turkey sandwiches,
and with roast beef.")

Makes 1 1/2 pints.

I've never had horseradish on any flavor ice cream, but I have had some scorchingly hot habanero pepper sauce on vanilla. I wouldn't call it "good", but it was definitely interesting.
